To boil artichokes, trim the stem and remove the tough outer leaves. Place them in a pot with enough water to cover them. Bring the water to a boil and then reduce to a simmer. Cook medium-sized artichokes for about 25-30 minutes until the base is tender when pierced with a knife. Larger artichokes may take around 40-45 minutes.
