  • Molasses: 2 tablespoons
  • Dark brown sugar: 3 tablespoons
  • Honey: 2 tablespoons
  • Tomato paste: 3 tablespoons
  • Garlic powder: 1 teaspoon
  • cider vinegar: ¼ cup
  • Smoked salt: 1 ½ teaspoons
  • Chili powder: ¼ teaspoon
  • Ground coriander: ¼ teaspoon
  • Smoked paprika: ½ teaspoon
  • Liquid smoke: ½ teaspoon

Procedure

First, grind the dried thyme and oregano in a spice grinder or mortar and pestle. Just try your best; it won't become a completely uniform, fine powder.

In a large mixing bowl, combine the ground spices, followed by the remaining spices. Mix well. In a different, large bowl put the chicken wings. After evenly coating the chicken wings with the spice mixture, sprinkle them again with the mixture. Refrigerate the marinade all night.

If you'd like, you can prepare the barbecue sauce in advance. It lasts at least a week in the refrigerator. Set your broiler to 550 degrees Fahrenheit to prepare the sauce.

Broil the onion and tomatoes for approximately eight to ten minutes, or until they start to brown and blacken around the edges, on a rimmed baking sheet lined with foil or silicone mat. However, if you use paper, it can burn.
